Each mantle wall is chosen for thickness, then scored with shallow diagonal cuts on both sides. That scoring does three jobs at once: it lets heat travel evenly through the flesh, stops the pieces curling on the barbecue, and opens up the surface so marinades soak all the way in.

Cooking ideas

Serve with a squeeze of lime and a pinch of flaky salt. The natural sweetness needs very little else.
Storage
Keep refrigerated at 0-4C and cook within 2 days, or freeze at -18C for up to 3 months.
